Even though Christmas is just around the corner, we’re still truckin’ along over here in Chile trying to experience as much of this place as we can before we leave in a week! It still is so weird to me to be getting so close to Christmas, yet the weather is warm and I’m living on a beach… It’s an experience for sure, but I don’t think it’s something I’d like to happen too often. I love the change of seasons and I’m a sucker for winter clothes and snow during Christmas time! It just helps get me in the Christmas spirit 🙂
The other day, we spent the afternoon with our landlord and his wife. They drove us up the coast and toured us around some of Valparaiso, Vina del Mar, and a bit of Con-con. I don’t think I could ever get sick of driving up and down the coast. It’s just so beautiful!
After the tour, we went to their house for a wonderful homemade lunch. Fresh salad with a yogurt dressing, oil, balsamic vinegar, and every garnished with cilantro! To drink, we had agua con gas with fresh mint. I’m not a huge fan of gas water, but it was bearable with the mint flavor! They have a mint plant in their backyard and they said that it just kind of expanded and went all over everywhere so they’re always putting mint in things to try and use at least a little of what they have haha. For the main course, we had homemade empanadas de pino which, as you can tell by the picture of the empty dish, were delicious! We ate them all before we could even take a picture… And for dessert we had papaya and raspberries in a papaya and raspberry syrup. I’ve never really liked papaya, but these papaya are very different from the ones I’ve had before! They’re a lot smaller than the ones I’m familiar with and the flavor is much sweeter. And it was delicious with raspberries! Sometimes home cooked meals really hit the spot.
When they built their home over 20 years ago, they were the only ones on the hill. Now the hill is filled with homes very tightly squeezed together, but they still have their beautiful view! We absolutely loved all of the detail in their home too with the exposed brick and the archways. We got a lot of inspiration for our future dream home!
Carter was so cute with this little baby doll. He came right over to it and was pointing and saying “up.” I picked up the doll to give to him and he started giggling as he held out his harms and gave her a hug. I said, “Can you give her a kiss, Carter?” And he immediately puckered up and gave her several kisses! It was so cute!
